SAKÉ DE BORDEAUX is located in the village of Mios, near the Atlantic coast and the famous Arcachon Bay, just outside Bordeaux. Our brewery covers approximately 200 square meters, nestled in a region known for its pristine environment.

The local groundwater here shares similar qualities with the renowned mineral water of Arcachon. It is one of the rare soft water sources in France, making it ideal for sake brewing—just like the water used in Japan.

Brewing Facilities & Process

Our facility is equipped with:

  • Four brewing tanks (2,200L each)
  • Eight storage tanks (600L each) housed in a refrigerated cellar maintained at -5°C
Inspired by the blending traditions of Bordeaux wines, we perform assemblage—a technique of blending unpasteurized sake—to create unique and balanced flavor profiles. From November onward, average daytime temperatures drop below 15°C, allowing us to brew during the colder months through to April. This cold-season brewing helps ensure a more stable and refined sake.​

Local wine making equipment being repurposed

Combining Local Wisdom with Tradition

We use as much locally sourced wine-making equipment as possible, adapting it to suit sake production. For example:

  • Instead of traditional square sake bags, we use round pressing bags commonly found in local wineries.
  • For the pasteurization process, we creatively repurpose watering troughs originally used to hydrate sheep.
Through this blend of Japanese tradition and French ingenuity, SAKÉ DE BORDEAUX crafts a truly original sake—born of two cultures, and brewed in harmony.
