Why We Brew Sake in Bordeaux — The City of Fermentation
Known for centuries as the capital of wine, Bordeaux is, in fact, a true city of fermentation.
In recent years, the number of craft breweries in the region has grown significantly, making beer a vibrant part of the local culture alongside wine. Against this backdrop, we believe that brewing sake here is a natural and meaningful evolution.
Wine (single fermentation), beer (single-stage multiple fermentation), and sake (parallel multiple fermentation) each represent unique approaches to fermentation. The introduction of sake brewing in Bordeaux fits seamlessly into this diverse brewing landscape.
Unlike wine, which is rooted in the land through fruit cultivation, both beer and sake are made from grains—ingredients that allow for mobility and flexibility in production. In fact, many local breweries in Bordeaux have chosen this region for the same reason we have: in search of good water.
Using locally sourced French rice, water, and yeast, we bring the tradition of Japanese sake brewing to life in this cultural crossroads. Through this craft, we hope to contribute to the global fermentation culture and share the depth and beauty of sake with a wider audience.
